Recipe - Sundried Tomato Garlic Spaghetti

Ingredients

  • 1 lb fresh pasta
  • 2 tablespoons olive oil
  • 3 cloves of minced garlic
  • 1/2 cup sundried tomatoes, roughly chopped
  • 3/4 cup heavy cream
  • 1/3 cup white wine
  • 1 teaspoon chili flakes (optional)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon lemon juice
  • 1/2 cup reserved pasta water
  • Salt and pepper to taste
  • Handful freshly chopped parsley
  • Garnish with parmesan cheese

Directions

  1. Cook pasta and reserve 1/2 cup of pasta water. Set pasta aside
  2. In a pan heat up olive oil then add in the minced garlic and chopped sundried tomatoes. Sauté until soft and fragrant for about 2 minutes
  3. Add in the heavy cream, white wine, chili flakes (optional), Italian seasoning, lemon juice, salt and pepper to taste and your freshly chopped parsley. Cook for a few minutes or until the sauce slightly thickens
  4. Add in your spaghetti and coat evenly in the sauce. Add in the reserved pasta water if you want a creamier texture
  5. Plate and garnish with parmesan cheese

Makes: 4-6 servings
