Add tomatoes, jalapeno, cilantro, salt, cumin, and black pepper. Cook until tomatoes are tender, about 5 minutes. Fill a large saucepan two-thirds full of water. Over high heat, boil water. Add zucchini spirals. Cook until tender, about 15 to 30 seconds. Drain and arrange on plates.
