½ teaspoon dried crushed red pepper

1 cup packed fresh cilantro leaves, chopped and divided

Directions
In a large skillet over medium-high, heat oil. Add onion, garlic, jalapeno, and ginger. Cook until onions are translucent, about 2 minutes.
Place slow cooker crock on slow cooker base. Add onion mixture to crock. Stir in cauliflower flowerets, red pepper, chickpeas, pumpkin puree, coconut milk, curry powder, salt, basil, cumin, dried red pepper, and black pepper until combined.
Cover slow cooker and cook on HIGH for 3 to 4 hours or LOW 7 to 8 hours.
Stir in ¾ cup chopped cilantro and lime juice.
Serve with cooked rice and sprinkle with remaining chopped cilantro.
