Pressure Cooker Hearty Beef Chili
Ingredients
- 1 1/2 pound boneless beef chuck roast, cut into 1/2-inch pieces
- 1 pound sweet Italian sausage, casing removed
- 1 small onion, chopped
- 2/3 cup chopped green pepper
- 3 cloves garlic, minced
- 2 can (14.5 ounces) diced tomatoes
- 2 can (14 ounces) kidney beans, drained
- 2 can (14 ounces) pinto beans, drained
- 1 can (4 ounces) chopped hot green chilies
- 2 can (12 ounces) tomato paste
- 2 cups chicken broth
- 3 tablespoons chili powder
- 1 ½ tablespoons sugar
- 1 tablespoon ground cumin
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
Directions
- Remove lid of pressure cooker. Press BROWN/SAUTÉ mode. Brown beef and sausage.
- Add onion, green pepper and garlic; stir until onions are tender. Drain. Turn off BROWN/SAUTÉ mode. Add remaining ingredients.
- Place lid on pressure cooker, turn lid to lock and move steam release valve to closed position.
- Press MEAT/STEW mode and adjust cooking time to 35 minutes.
- When cooking has finished, allow a natural pressure release.
Serves: 10-12
Test Kitchen Tip: If using MANUAL mode, select HIGH pressure and set for 35 minutes. When finished cooking, allow a natural pressure release.
