Pressure Cooker Hearty Beef Chili

Ingredients

  • 1 1/2 pound boneless beef chuck roast, cut into 1/2-inch pieces
  • 1 pound sweet Italian sausage, casing removed
  • 1 small onion, chopped
  • 2/3 cup chopped green pepper
  • 3 cloves garlic, minced
  • 2 can (14.5 ounces) diced tomatoes
  • 2 can (14 ounces) kidney beans, drained
  • 2 can (14 ounces) pinto beans, drained
  • 1 can (4 ounces) chopped hot green chilies
  • 2 can (12 ounces) tomato paste
  • 2 cups chicken broth
  • 3 tablespoons chili powder
  • 1 ½ tablespoons sugar
  • 1 tablespoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Remove lid of pressure cooker. Press BROWN/SAUTÉ mode. Brown beef and sausage.
  2. Add onion, green pepper and garlic; stir until onions are tender. Drain. Turn off BROWN/SAUTÉ mode. Add remaining ingredients.
  3. Place lid on pressure cooker, turn lid to lock and move steam release valve to closed position.
  4. Press MEAT/STEW mode and adjust cooking time to 35 minutes.
  5. When cooking has finished, allow a natural pressure release.

Serves: 10-12

Test Kitchen Tip: If using MANUAL mode, select HIGH pressure and set for 35 minutes. When finished cooking, allow a natural pressure release.
