Recipe - Peruvian Green Sauce

Ingredients

  • 3/4 cup packed cilantro leaves 
  • 1 green onion, cut into 1-inch pieces 
  • 1 small jalapeno, halved 
  • 1 small clove garlic 
  • 1/3 cup mayonnaise 
  • 1 tablespoon plain Greek yogurt 
  • 1 tablespoon lime juice 
  • 2 teaspoons olive oil 

Directions

  1. In a personal blender or small food processor, add cilantro, green onion, jalapeno, and garlic. Cover and pulse until mixture is finely chopped. 
  2. Add mayonnaise, yogurt, lime juice and oil. Process until mixture is well blended. Pour into a serving bowl. Cover and refrigerate until ready to serve. 
  3. Serve with Peruvian Chicken Kabobs. 

Makes: 4-6 servings 

Test Kitchen Tip:
Sauce can be made two days ahead, cover and refrigerate.
