In a small saucepan over medium-high, heat water until boiling.
Add sugar and stir until dissolved.
Reduce heat to low, add mint and cook 1 minute.
Remove from heat and let cool 2 hours. Remove mint leaves.
Place in an airtight container and refrigerate. Add to coffee or tea with half and half, if desired.
Makes: 1 cup
Test Kitchen Tip: Save your simple syrup by freezing it! Pour your simple syrup into an ice cube tray and put it in the freezer. Pop a mint simple syrup ice cube out when you are ready to use it and let it thaw. Use it in your recipes as needed.
