Dairy-Free Homemade Vodka Pasta
Ingredients
Pasta:
- 400 g all-purpose flour
- 1 large egg
- 90 g water
**recipe book that comes with machine has an egg-free option!
Vodka sauce:
- 1-2 tablespoons olive oil, enough to cover the pan
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 cup + 2 tbsp tomato paste
- red pepper flakes (lots!)
- 2-3 oz vodka
- 1 cup coconut cream (the solid part at the top of a can of full fat coconut milk, or can be bought separately)
- up to 1 cup reserved pasta water, as needed
- Salt + pepper
Directions
- Prepare pasta according to the directions provided with the Hamilton Beach Electric Pasta Maker.
- Boil for 3-4 minutes until al-dente.
- Reserve 1 cup of the pasta water and drain the rest.
- Add oil to a pan over medium heat. Once hot, add onion and sauté for a few minutes until translucent.
- Add garlic and cook for another minute until fragrant.
- Add tomato paste and red pepper flakes and stir, cooking for about 5 minutes until browned.
- Deglaze the pan with vodka. Reduce heat to low and add coconut cream, stirring until smooth.
- Add about 1/2 cup pasta water and stir again. Season with salt & pepper.
- Turn off heat and add back in the cooked pasta. Add more pasta water as needed to get the noodles fully coated with sauce. Enjoy!
Serves: 4-6 (depending on how hungr you are!)
