Southwestern Jalapeno Deviled Eggs
Ingredients
- 6 large hard cooked eggs, peeled and cut lengthwise
- 3 tablespoons mayonnaise
- 2 tablespoons packed cilantro leaves only
- 2 tablespoons drained diced pickled jalapeno
- 1 teaspoon yellow mustard
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon coarse black pepper
- 12 thin slices jalapeno
Directions
- Using food chopper fitted with a stainless-steel blade, process egg yolks, mayonnaise, cilantro, diced jalapeno, mustard, chili powder, cumin, salt, and black pepper.
- Pipe yolk mixture into each egg white half.
- Cover and refrigerate until ready to serve.
- Top each half with a jalapeno slice before serving.
Serves: 12
Test Kitchen Tips: To pipe yolk mixture, place mixture in a resealable plastic bag. Close bag. With scissors, cut one tip off bottom corner of bag. Squeeze bag to pipe onto each egg half.
