Slow Cooker Succotash
Ingredients
2 tablespoons butter
1 small onion, chopped
1 celery rib, chopped
1 package (1 lb.) frozen lima beans
1 package (8 oz.) frozen corn
1 teaspoon salt
1/2 teaspoon black pepper
Directions
- Melt butter over medium heat in cast iron crock. Add onion and celery to crock, cooking for 4 minutes until onions are tender.
- Stir lima beans, corn, salt and pepper into onion mixture.
- Cover and cook on HIGH for 2 hours or MEDIUM for 4 hours.
Serves: 8-10
