Recipe - Slow Cooker Salsa Chicken Taco Salad

Ingredients

Salsa chicken:

  • 2 lbs chicken breast
  • 1 15oz jar of salsa
  • 1 tbsp olive oil

Taco salad ingredients:

  • lettuce
  • carbohydrate of choice
  • diced bell pepper
  • cherry tomatoes
  • avocado
  • juice of lime
  • hemp seeds (optional)

Directions

  1. Add chicken breast, jar of salsa and olive oil to a 5-6 quart slow cooker.
  2. Cook on low for 6-7 hours, or high for 3-4 hours.
  3. Once the chicken is done, remove the chicken and place in a bowl. Use the Hamilton Beach Professional Hand Mixer with Easy Beaters to shred the chicken, then place back in the slow cooker to mix with the remaining salsa.
  4. Gather your salad ingredients in a bowl with the salsa chicken. Mix together the avocado and lime as a creamy dressing and enjoy!
