Slow Cooker Apple Ginger Compote

Ingredients

  • 6 Granny Smith apples, cored, cut in large chunks
  • 2 (4-inch) cinnamon sticks
  • 1 cup golden raisins
  • 1 cup packed light brown sugar
  • 1/2 cup apple juice
  • 2-inch piece fresh ginger, peeled and minced
  • 1 teaspoon lemon zest
  • Gingersnap cookies

Directions

  1. Place all ingredients except cookies in slow cooker crock and stir to combine.
  2. Cover slow cooker and cook on HIGH for 2 to 3 hours or LOW for 4 to 5 hours.
  3. Stir and remove cinnamon sticks.
  4. Serve warm with gingersnap cookies.

Serves: 6
