Roast Beef with Peppers and Onions Sandwich
Ingredients
- 2 tablespoons mayonnaise
- 2 pinches chipotle powder, or to taste
- 2 slices bread of choice
- 1 tablespoon softened butter, divided
- 1 slice pepperjack cheese
- ½ cup red and yellow bell peppers, sliced into strips and sautéed
- ½ small, sweet onion, thinly sliced and sautéed
- Salt and black pepper, to taste
- 3 ounces sliced roast beef
Directions
- Preheat Sandwich Stacker until green PREHEAT light comes on.
- In a small bowl, combine mayonnaise and chipotle powder.
- Spread one side of each slice of bread with ½ of butter. Spread each opposite side with ½ of chipotle mayonnaise.
- Lift cover, top ring and cooking plate.
- Place one slice of bread, buttered side down, in bottom ring of Sandwich Stacker. Top with cheese, peppers and onions. Season with salt and black pepper
- Lower cooking plate and top ring. Add roast beef to top cooking plate. Top with remaining slice of bread, buttered side up.
- Close cover. Cook for 3 ½ to 4 minutes.
- Slide out cooking plate by grasping cooking plate handle and pivoting right until it stops. Lift cover and rings; carefully remove sandwich with plastic spatula.
- Cool slightly before serving.
Makes: 1 serving

Substitute mayonnaise and chipotle powder with store bought chipotle mayonnaise or spicy mayonnaise of your choice.
