Pressure Cooker Healthy Chicken and Broccoli
Ingredients
- 1 can (14 ½ ounces) chicken broth
- ¼ cup lite soy sauce
- ¼ cup rice vinegar
- 2 tablespoons hoisin sauce
- ¾ teaspoon ground black pepper
- 2 pounds fresh chicken tenders
- 1 medium red bell pepper, seeded and cut into ½ -inch slices
- 1 medium yellow bell pepper, seeded and cut into ½- inch slices
- 3 cups large broccoli flowerets
- 3 tablespoons cornstarch
- 2 tablespoons water
- 1 tablespoon sesame oil
- 1 cup coarsely chopped walnuts
- Hot cooked farro
Directions
- Remove lid of pressure cooker. Add chicken broth, soy sauce, vinegar, hoisin and black pepper to pot. Whisk to combine. Add chicken and stir to coat chicken with mixture. Place peppers on top of chicken, followed by broccoli.
- Place lid on pressure cooker, turn lid to lock and move steam release valve to closed position.
- Press POULTRY mode and adjust cooking time to set for 8 minutes.
- When cooking has finished, press steam release button to quick pressure release.
- Remove lid and press BROWN/SAUTÉ mode. In a small bowl, mix cornstarch with water. Add to chicken mixture and cook until thickened. Turn off BROWN/SAUTÉ mode.
- Stir in sesame oil. Sprinkle with walnuts and serve with farro.
Serves: 4 (yield 8 scant cups)
Test Kitchen Tip: If using MANUAL mode, select HIGH pressure and set for 8 minutes. When finished cooking, press steam release button to quick release pressure.
