Jalapeño Poppers
Ingredients
- 6 fresh jalapeños, halved lengthwise, seeds and membranes removed
- 4 oz reduced-fat cream cheese, softened
- ½ cup plain non-fat Greek yogurt
- ½ cup shredded reduced-fat cheddar cheese (or Mexican blend)
- 2 green onions, finely chopped
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt & pepper, to taste
- ½ cup whole wheat panko breadcrumbs
Directions
- Add cream cheese, Greek yogurt, cheddar, green onions, garlic powder, smoked paprika, salt, and pepper to a medium bowl. Stir until smooth.
- Spoon mixture into jalapeño halves, filling generously.
- Sprinkle panko breadcrumbs evenly over the tops. Lightly mist with cooking spray.
- Place stuffed jalapeños in a single layer in the air fryer basket.
- Cook in the air fryer at 375°F for 8–10 minutes, until golden brown and bubbly.
